Scrumptious Banana Bread

Makes 1 Loaf

What You Need:
  • 1 3/4 Cups Flour
  • 1 1/4 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 3/4 Teaspoon Salt
  • 2/3 Cups Sugar
  • 1/3 Cups Shortening
  • 2 Eggs
  • 2-3 Bananas
Preheat the oven to 350 degrees.

Spray a loaf pan with non-stick cooking spray.

Mix all ingredients into a bowl. Your hands are the best tool in this case, so don't be afraid to get a little messy.

The mixture should have the consistency of a cake mix. Small chunks of banana are ok to leave, it doesn't need to be completely smooth.

Add the mixture to the loaf pan. Tap the pan on the counter a few times to even out the mixture and to get rid of any air bubbles.

 
 
At this point you can either stick the bread in the oven, or you can add a little something extra on top. Ideas:
  • Walnuts
  • Brown Sugar
  • Cinnamon
  • Pumpkin or Apple Pie Spice
For this banana bread I used Pumpkin Pie Spice

 
 
Bake for 55 mins. The Bread should raise, might crack some on top, and should be golden brown. You can try sticking a tooth pick in the middle, though you may hit a banana chunk in which case the toothpick will not come out clean. My suggestion...try it more then once.


Once done, cool it for 10-15 mins before taking it out of the pan.

To remove from the pan, run a butter knife along the edges of the pan. Place a place on top on the bread, and flip the pan over on top of the plate. Tap the bottom of the loaf pan with the butter knife, and remove the pan. Turn your bread right side up, and you may slice into pieces and serve.





My dad likes to eat his with butter. My husband likes his plain. I like mine with vanilla ice cream...yummy!!
